Chocolate Chip Cookie... revisited

Yet another cookie, this time the best ever chocolate chip cookie!! You honestly have to try this recipe. It's so much better than the previous recipe I tried. You will notice that it's quite similar but the amounts differ which is what makes the difference. These cookies are light, moist and crunchy at the same time.

Cookie cookie

now that's what I call a stack of cookies :)

170g butter
80g white sugar
80g brown sugar
1/2 tablespoon vanilla extract
1 egg
250g flour
1 teaspoon baking powder
1/4 teaspoon salt
300g chocolate chips

  • Preheat oven to 180C. Line baking sheets with parchment paper.
  • Beat the butter, sugars, egg and vanilla extract together until light and fluffy.
  • Stir in flour, baking powder and salt.
  • Finally add the chocolate chips.
  • I used an ice cream scoop to place cookie dough evenly spaced on a baking sheet. Alternatively drop heaped tablespoonfuls of dough on to the baking sheet.
  • Bake for 11-13 minutes or until light brown (centre will still be soft).
  • Allow to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

  1. Hi, these cookies do look really good! Are they chewy in the middle or quite crunchy all the way through? x

  2. I'd like to know about their texture, too. As you know, I like all cookies, but you know how it is with a cookie craving. Sometimes you want chewy, and other times you want crunchy...

  5. Yum yum i'm definately going to try this soon! How many cookies did the recipe make?
    Also, I can see the picture where you put the dough on the tray, but do you 'flatten' it before they go in the oven?

  7. @shewhisks - the cookies are crunchy on the outside and chewy in the middle. They keep really well too.
    @cookie sleuth - see above
    @lucie - thanks. Try it and you won't regret it.
    @fireinthebreeze - cookies galore indeed :)
    @leanne - forgot to count how many cookies, think it was about 16-18? I used an ice cream scoop to get even sized cookies and I didn't flatten the dough. The cookies turned out as shown.
    @andrea - thanks!
