Passionfruit and Cream Cheese Filled Chocolate Easter Eggs

No bake Easter treat

Happy Friday everyone! Life has been so crazy and hectic lately I'm really pleased that it's a long bank holiday weekend. There's lots planned for the weekend but at least I get to have a lie in and hopefully a chance to bake a few Easter themed treats. I saw this recipe on pinterest and immediately bookmarked it.  Last year I baked chocolate easter eggs with a twist which I also baked back in 2012 so I wanted something a little different this year. This recipe was perfect as it's a really quick and easy no bake treat which looks very impressive. 

You need to get hollow easter eggs - larger eggs will be easier to work with as you can just spoon the filling in. I bought these mini eggs so I used a piping bag to fill the eggs. The cheesecake mixture is really quick and easy to make and tastes great on its own. My favourite part is the 'yolk' which is a passionfruit and apricot curd. I also made some chocolate spoons to go with the eggs using my chocolate spoon mould.

 cut the tops of the chocolate eggs. I left the foil wrapping on so that the eggs don't melt into the container and make a mess. Plus it's quite nice unwrapping the egg and eating it. I used a quails egg tray to hold the eggs. If you have larger eggs then a regular egg carton should suffice. 

 Fill with cheesecake filling 

 Pipe the 'egg yolk' on top 

 This is a half filled chocolate egg (well one that I broke but waste not want not)

Recipe from raspberri cupcakes 

Makes enough to fill 18 mini eggs plus extra to eat

For the cream cheese filling 
150g cream cheese
30g icing sugar
2 teaspoons lemon juice
1 teaspoon vanilla extract 
125mls double cream

For the 'egg yolk' 
1 passionfruit - sliced and sieved to get the juice only
1 tablespoon apricot jam
15g butter 

For the chocolate spoon (optional) 
chocolate from the tops of the chocolate eggs
approximately 75g milk chocolate 

  • Prepare the chocolate eggs by peeling off the top bit of foil and cutting the tops off with a sharp knife.
  • Place the eggs in a suitable tray and place in the fridge.
  • (I melted the tops of the chocolate eggs plus some extra chocolate to make my chocolate spoons so there was no wastage) 
  • Make the 'egg yolk' by placing the pasionfruit juice, apricot jam and butter in a small saucepan over a low heat. 
  • Whisk continuously until the butter has melted and the mixture is smooth. 
  • Allow to cool completely then place in the fridge to set. 
  • Now make the cream cheese filling by placing the cream cheese, icing sugar, lemon juice and vanilla extract in a mixing bowl and beating until it's smooth and fluffy. 
  • Beat the cream in a separate bowl until stiff peaks form.
  • Scoop the beaten cream into the cream cheese mixture and beat until smooth. 
  • Place the cream cheese mixture in a piping bag and pipe into the chocolate shells.
  • Place in the fridge to set for about 15-20 minutes.
  • Place the chilled 'egg yolk' mixture in a piping bag and pipe on top of each filled egg.

Tropical Hummingbird Cake


This is a special birthday cake for my mum's birthday. She loves fruits so I decided to make a tropical hummingbird cake having seen the recipe on bbc.co.uk.  The hummingbird cake I made earlier in the year which was also for a birthday contained bananas and pineapple. This cake has the addition of mangoes and passionfruit and it was really refreshing and delicious. The fruit flavours really came through and the sponge was very light.  The cream cheese frosting paired well with the cake.  However, I didn't like the texture of the passionfruit seeds which were crunchy but also a little 'sandy'.  Thankfully my mum loved it and she wants to make the same cake for Christmas this year.
I also wanted to try out some new molds that I bought recently - butterfly and daisy mold. They didn't quite turn out as some of the cake stuck to the mold and I didn't have time to do much creative decorating but it still looks quite cute.

For the cake
250g/8¾oz plain flour
250g/8¾oz caster sugar
1 tsp ground cinnamon
1 tsp bicarbonate of soda
3 free-range eggs, beaten
200ml/7fl oz sunflower oil, plus extra for greasing
50g/1¾oz pecan nuts, roughly chopped
50g/1¾oz walnuts, roughly chopped
2 bananas, mashed
1 large mango, peeled, stoned removed, flesh mashed
2 passion fruit, pulp only
85g/3oz tinned pineapple, mashed
1 orange, zest only


For the cream cheese frosting
200g/7oz full-fat soft cheese
50g/1¾oz unsalted butter, softened
1 orange, zest only
400g/14oz icing sugar


  • Preheat oven to 180C/350F/Gas 4. Grease and line three 20cm/8in cake tins.
  • Sift the flour, caster sugar, ground cinnamon and bicarbonate of soda together in a bowl.
  • Stir in the eggs, sunflower oil, nuts, fruit and orange zest until well combined.
  • Divide the cake batter among the three cake tins and bake in the oven for 30-35 minutes, or until risen and golden-brown.
  • Remove from the oven and set aside to cool for 10 minutes. Run a round-bladed knife around the inside edge of the tins to loosen the cakes. Remove the cakes from their tins and transfer to a wire rack to cool completely.
  • Meanwhile, for the cream cheese icing, blend the cheese and butter together with an electric whisk until thick and creamy. Add the orange zest and sift in the icing sugar. Stir gently until well combined, then chill in the fridge until needed.
  • Once the cakes are cool, spread cream cheese icing on top of each cake. Stack the cakes to make one three-tiered cake.

Tropical Passion

The theme for February's Iron Cupcake London challenge is 'Love'.  I knew there would probably be a lot of chocolate, berries, champagne, rose or variations of these flavours. So I decided to be slightly different and came up with 2 ideas. The first is 'tropical passion' which is a passionfruit and pineapple cupcake with a lime and coconut frosting. I topped it with little pink glitter hearts and added a little umbrella for effect. What do you think? It was a really light and refreshing cake.


The batter smelled absolutely divine - I got some really nice passionfruit from Waitrose


Passionfruit and Pineapple Cupcake
90g butter, softened
1/2 cup caster sugar
2 eggs
3/4 cup self-raising flour
1/4 cup cornflour
1/2 cup crushed pineapple (well drained)
1/4 cup passionfruit pulp (about 2 fruits depending on size)

Lime and Coconut Buttercream
115g unsalted butter, at room temperature
2 tablespoons freshly squeezed lime juice
grated zest of 1-2 limes (approx 2 teaspoons)
500g icing sugar, sifted
Handful of dessicated coconut to decorate



  • Preheat oven to 180C

  • Beat butter, eggs, sugar and flour in a small bowl with an electric mixer on low speed until ingredients are just combined. Increase speed to medium, beat until mixture is pale in colour.

  • Stir in passionfruit pulp and crushed pineapple.

  • Divide mixture among cupcake cases.

  • Bake for approximately 20-25minutes

  • For the frosting - beat butter, lime juice, zest and half the icing sugar until smooth. Gradually add the remainder of the icing sugar and beat until thick and creamy.
