Iron Cupcake London Challenge May - Fruit

It's been a while since the last Iron Cupcake Challenge as we didn't have one in April which is just as well as I would have had to miss it. I'm so glad it worked out that way as it would have been a shame to miss the fruit challenge. This month was slightly quieter than previous months but the standards were just as good if not better. Everyone was really creative and there was fruit galore. Click here for full details of the event.
I made sticky toffee cupcakes with salted caramel buttercream which contain dates. Everyone kept asking what fruit? I thought I'd go for the subtle approach. Another great baker had the same idea (sticky toffee)- I like to think great bakers think alike :) Check out her blog here. I guessed there would be a lot of berries and citrus fruit and my fellow bakers didn't fail to disappoint.

Next month's theme is 'celebration' as Iron Cupcake London is celebrating it's first birthday. Any ideas?

  5. What a fun event. I'd like to visit that sometime, maybe do an entry (although transportation with all those cupcakes may be an issue).
    For celebration cupcakes, what about sparklers? That would look pretty theatrical, dont u think?

  6. Thanks, I love oreos too! so would definitely recommend you bake these as they turn out great every time! I have to admit I wasn't planning on trying your cupcakes at ICC when I heard they had date in (as I'm not a date lover!) but my friends persuaded me otherwise and they were really yummy!

  9. Thanks so much for the mention on your blog :) I didn't get a chance to try yours as by then I was sick of the taste of sticky toffee after taste testing mine way too often!
    Looking forward to seeing what you do for celebration - and trying them too!
    @Lorraine - the watermelon ones were really tasty and I thought they had a juicyness of watermelon in the frosting and base - very clever and yum!
