1/2 cup wholemeal flour
1/2 cup plain flour
1 teaspoon baking powder
1/3 cup vegetable oil
1/3 + 1/4 cup dark brown sugar (I reduced the sugar as I prefer it less sweet)
1 large egg
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup raisins
- Preheat oven to 180C
- Mix flours and baking powder in a medium bowl and set aside.
- Whisk together oil, sugar, egg and vanilla extract.
- Add the flour mixture and stir to combine.
- Add in oats and raisins.
- Place balls of cookie dough on a baking sheet and bake for approximately 15-17 minutes.
- Cool for 5 minutes on the baking sheet then transfer to a cooling rack.
Those oatmeal raisin cookies look fantastic! Textbook perfect! Keep up this cookie binge!! :)
